Just got back from Buzzard Billy's, an outstanding New Orleans cajun cuisine restaurant in my town.

GREAT FOOD. Appetizers include alligator fingers, armadillo eggs, oysters chipolte, deep fried pickle chips..... :drool: Main courses are very diverse and DEELICIOUS......catfish, seafood, soups, blackened dishes, salads, pastas...... I had the seafood and chicken au gratin with armadillo eggs. HUGE plates of food for a very good price. I always have to take some home with me, as I can never eat it all!!

Nature Valley Almond granola bar..and some coffee (Dunkin Donuts Dark roast, mixed with some DD Decaf..so I'm not hyper all day)

 

Lunch...not sure, but for dinner I'll be having leftover Jambalaya! (here's my recipe):

 

Emeril's Cajun Jambalaya

(For a large pot)

Ingredients

  • 2 lbs medium shrimp, peeled, deveined
  • 2 lbs chicken, diced
  • Creole seasoning, recipe follows
  • 4 tablespoons olive oil
  • 1.5 cup chopped onion
  • 1.5 cup chopped red pepper
  • 1cup chopped celery
  • 2 cloves chopped garlic
  • 1.5 cup chopped tomatoes
  • 3 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce
  • 2 pounds of rice
  • 6 cups chicken stock (or more if necessary)
  • 1.5 pounds Andouille sausage, sliced
  • Salt and pepper

Directions

In a bowl combine shrimp, chicken and Emeril’s Creole seasoning, and work in seasoning well. In a large saucepan heat oil over high heat with onion, pepper and celery, 3 minutes. Add garlic, tomatoes, bay leaves, Worcestershire and hot sauces. Stir in rice and slowly add broth. Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes. When rice is just tender add shrimp and chicken mixture and sausage. Cook until meat is done, about 10 minutes more. Season to taste with salt, pepper and Creole seasoning.

 

Emeril's ESSENCE Creole Seasoning

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Lovely Wife took me to sushi tonight for the birfday. Behold! The Black Dragon. Eel, avocado, seaweed, flyish fish roe. And a Manhattan built to my specifications (which looks weirdly pink in this pic). Glory be.

I'm at a bar for a record trade and DJ show and just had some fancy hot dog that's topped with onions, mayo, cheese, bacon, and some salsa with fries! For $7, I thought it was a very good dinner out in Brooklyn!

I went back and looked at the menu from this place and I actually got the mayo part totally wrong...it was the standard ketchup and mustard and it had crushed potato chips also. IDK why I thought it had mayo on it tbh but I did have a shot of Jameson and a can of Budweiser before this was taken so I probably wasn't thinking/remembering normally :LOL: Edited by PolarizeMe
