Empanadillas with some rice, black pea & sausage concoction from a new local Puerto Rican place. I've eaten there twice in the last three days!!

My neighbor came over this morning with an armful of produce from his abundant garden.

 

Now I have a few massive zucchinis and a pile of snow-peas.

Troutman, the snow-peas are so sweet. They're delicious. I just eat them raw.

 

Not sure what to do with the zucchini yet.

 

Yeah ,

I like them that way also. But if you have a lot. Maybe a nice salad or veggie soup

Red beans and rice.

 

I just love that combo.

 

I'm going to have to look for some recipes and make it for myself. Had a friend from Barbados who used to make it for me. I don't know what she did that was so different and special, but her red beans and rice were delicious.

Should I dip them in egg and bread crumbs or just fry them up plain?
