Picking one at random from this large pool of awesome solos, it would probably have to be GnR's November Rain. Also, The Grateful Dead's rendition of 'Going Down The Road Feeling Bad' from 'Skull and Roses': Jerry's rip-roaring solo gets me in such a good mood every time I hear it.
