That's an interesting combo. :cool:

 

It's got some kind of Italian-type dressing on it. It's like an olive salad.

I just picked up stuff for nachos: chips, refried beans to make bean dip, cheese, and nice ripe avocados and tomatoes (mine aren't ripe yet :( ) for guacamole!

Homemade curried carrot salad:

 

Grated organic carrots

Lemon juice

Spun honey

Olive oil

Chopped pecans

White raisins

Curry seasoning

 

Damn that sounds awesome!!

 

Got a recipe? My girlfriend would love it. She makes a carrot salad.

Homemade curried carrot salad:

 

Grated organic carrots

Lemon juice

Spun honey

Olive oil

Chopped pecans

White raisins

Curry seasoning

Got a recipe? My girlfriend would love it. She makes a carrot salad.

Kind of did it by feel. Essentially...

 

1. Peel and grate a bunch of carrots. I did between ten and twelve, to have it throughout the week.

 

2. Set the carrots aside in a big bowl, with room for stirring.

 

3. Squeeze the juice of one-half lemon into a small mixing bowl. I used one of those wooden juicers to get all the juice and a little pulp

 

4. Use a fine grater to add a bit of lemon zest to the bowl

 

5. Add a 1/4 to 1/3 cup honey. Mine was spun honey.

 

6. Stir lemon/honey mixture, then fold into the grated carrots.

 

7. Chop 1/4 cup pecans and fold into salad

 

8. Fold in raisins

 

9. I added the curry, to taste, to my personal serving. You could fold it into the entire bowl quite easily.
