Nope not today. Cajuns aren't known for their mushroom dishes. I was just down in CajunLand, and brought back a ton of this stuff. Mmmmmmm

Had probably the best fish tacos in Salt Lake City tonight.

 

Not cheap, $7.80 for two with a water after tax.

 

What type of fish,

 

Halibut?

Rotates, and isn't displayed. You don't find out til they hit your table.

 

Last time it was salmon. Not sure what it was this time. Always amazing though.

Halibut is the cream of the crop. Heaven on earth would be halibut for the price of ground beef at grocers.

 

This place, Lone Star Taqueria, was on Diners, Drive-ins, and Dives, apparently.

3 tbl butter

1 1/2 cups chopped onions

1 tbl chopped garlic

1 1/2 lbs chopped pork tenderloin (or sirloin)

1/2 cup flour

2 tbl paprika

1 small can tomato paste

1 16 oz can chopped tomato

4 cups of water

8 tsp beef bouillon

2 tbl sugar

4 diced potatoes

6 large carrots, diced

2 green bell peppers, diced

2 red bell peppers, diced

2 bay leafs

1/2 tsp dried marjoram

1/2 tsp caraway seeds

1/2 tsp salt

1/2 tsp pepper

1/2 cup cream

 

Melt butter in large Dutch oven or kettle, and add onions. Cook until translucent.

 

Stir in garlic and meat. Cook until meat is brown.

 

Add flour, paprika, and tomato paste. Stir until smooth.

 

Add chopped tomatoes, water, and bouillon. Stir to separate meat.

 

Add remaining ingredients except cream. Stir to combine

 

Heat to boiling. Reduce heat and simmer for about an hour or until veggies are tender.

 

Remove from heat, and add cream. Serve over German Spaetzle or egg noodles.
