Leftover potato curry over rice

I tried making mujaddara, a Western Asian rice and lentil dish, for the first time. I don’t like the recipe that I tried, so I’ll try this one next. I’ll probably make it weekly since it’s so cheap, easy, and filling. It has a whopping 14 grams of protein.

Rolled into my in-laws' place on the WA-Canada border.  They served up some BBQ pizza for supper tonight and it was pretty tasty, though  I was hoping for a break from carbs...

Leftover mujadara, probably. I made some last night and I finally got the texture right! It’s sooooo filling and cheap to make.

In laws are serving up steak and salad*.  I hope it's a rib-eye.

 

 

 

* I talked them out of baked potatoes.  We had potato salad for lunch

Peposo and pasta,  from my neighbor who just got back from Italy.  Basically it's chuck roast slow cooked in chianti, peppercorns and salt, which of course makes it amazing tasting
