Brown lentil curry with Indian yellow jasmine rice. I added canned carrots and canned potatoes to the curry to bulk it up and add more nutrients! Then I did 1 2/3 cup of coconut milk and the rest water for more flavor and to give it a creamier texture. I could eat this for lunch and dinner every day.
