Lost In Xanadu
Well, summer's almost over and thought I'd take a minute to remind you to grab onto that BBQ while you can. I'm talking BBQ - not just stuff thrown on the grill. Stuff that has been slow cooked in a smoker for hours: Ribs Pulled Pork Beef Brisket BBQ Chicken A new place opened near work and we hit it today... amazing brisket. Just amazing. So tender, perfect amount of smoke and char on the outside. This past weekend, I threw a pork shoulder on the smoker for 12 hours. I have an electric water smoker, and I put apple juice, apple cider vinegar and water in the water basin. Went to coach football and the sugars in the apple juice burned to high heaven when the basin went dry. Totally ruined the pork shoulder... lucky it was only $10 for the shoulder. Never one to claim defeat, I threw 3 racks of ribs on the smoker the next day and watched the liquid level very carefully, mopping the ribs every 2 hours and topping off the basin. Man did the ribs turn out good. Here's to some good, down home BBQ!!
