Lost In Xanadu Posted August 28, 2015 Share Posted August 28, 2015 One of my favorite things to eat is the poached pear salad I make. It's an effort to make it, but it is worth it. I peel, quarter and seed a pear for each person I'll be serving (usually 4). Throw those in a pot with red wine, grape juice and a little sugar and a dash of nutmeg. Simmer for at least an hour, when the sauce gets real think like a syrup - time to stop. (save the liquid for the dressing) While it's cooking, I will candy some walnuts (just heat sugar until lightly golden, stir in walnuts... done. Also will grill chicken. To serve: Romaine, sliced chicken, poached pears, candied walnuts, gorgonzola cheese. I mean I used to have kebabs with pitta bread, relish, chili sauce and some salad was thrown in there as well.
