launchpad67a Posted April 23, 2007 Share Posted April 23, 2007 Every other month I make a huge pan (hotel pan) of Lasagne. Well this time I got a bit carried away and made a "4 layer" pan. I put it on the scale and it came in at a whopping 21 Lbs !!! I always give a bunch away and freeze the rest. Here are some pics. launchpad67a Posted April 23, 2007 Author Share Posted April 23, 2007 Here's my recipe, just for You Sunny...... (this is going to take me 20 minutes to type) This recipe is for an entire Hotel Pan. For those of you who don't know what that means, it means it's Industrial Sized. Ingredients Needed: 3 - 1lb Packages Lasagne Noodles 2lbs Pork Sausage (or Italian) 4 - 26oz cans of Sauce 1 - 2lb tub of Rocotta Cheese 1 -1lb package of sliced Pepperoni 6 eggs 1 - head garlic 2 - rip tomatoes 1 - bunch Italian Parsley 1 - White Onion 3 - 1lb Packages of Shredded Italian Cheeses (or whatevers onsale) Various Seasoning (italian, crushed red pepper, tyme, basil, salt) Prep: -Chop entire onion into bite-sized pieces. -Mince entire head of garlic (fine). -Combine Rocotta, 6 eggs salt&pepper, italian seasoning in a bowl. Mix well and then put back in the fridge. -Open all 4 cans Sauce -Fill the largest Pot you have with water and put on stove to boil -Slice both tomatoes very thin. Set aside. -Rough Chop Italian Parsley. Set aside. Cooking Prep: -Heat a large saucepan to med-high and put in the Onions with a little oil, salt and pepper. After about 4 minutes, throw in the garlic. let sautee for about 8 minutes. -Heat large skillet (med heat) and throw in the Pork Sausage. Break up sausage as it cooks (very important). Break into very small pieces and let it Brown. You can't hurt it! -After cooking the onion/garlic mixture for about 10 minutes, Add 3 cans of the Sauce. Add any additional seasonings you want at this point (i recommend just about anything). -Cover Sauce pot and reduce heat to simmer (the longer you cook this, the better). -As Sausage cooks, spoon some of the juices into the sauce pot. -Let sausage finish cooking completely and continue to simmer sauce. -Throw in All 3 Packages of Lasagne Noodle to you boiling water pot. -Cook for ONLY 10 minutes. They should only be 2/3 cooked!! Final Assembly: -Pre-heat oven to 350 -Grease bottom of pan. 1) Layer of Sauce 2) Layer of Noodles (slightly overlapping the edges) 3) Layer of Rocotta Mixture 4) Layer of Sausage 5) Small amout of chopped Italian Parsley 6) Layer of Pepperoni 7) Small Layer of shredded cheese 8) Layer of Sauce REPEAT Steps 2-8 until your pan is nearly full. Save 1 1/2 packages of Cheese for the end. -add remaining Noodles to top Layer of pan. -add last can of uncooked sauce to this layer -add all remaining preped items to this top layer. -Lay sliced tomatoes across entire pan -Distribute rest of shredded cheese over entire pan -Distribute rest of Italian Parsley over entire pan. (Grab bottle of Vodka and pound half of it) Cover pan with foil and throw in the oven @ 350. Cook for 1 hour. Take foil off and cook another 15 minutes. Let rest for 10 minutes before cutting.
