I've been too lazy to go buy a book lately. Anyone have good crockpot "meal" type recipes? This is one of my favorite desserts to make in the crock..it is to die for. PEAR AND CHERRY BUCKLE Ingredients * 1 (26-ounce) can cherry pie filling * 2 (15-ounce) cans diced pears in syrup * 1 teaspoon almond extract * 1 (18.25-ounce) box yellow cake mix * 1 stick butter, cut into small pieces * 1 (1.19-ounce) packet maple and brown sugar instant oatmeal * 1/4 cup sliced almonds * Whipped topping, for serving Directions Spray a 5-quart slow cooker with butter-flavored cooking spray and set aside. In a large bowl, combine pie filling, pears, and almond extract. Pour into prepared slow cooker. Sprinkle cake mix over fruit mixture. Dot with butter. In a small bowl, combine oatmeal packet and almonds. Sprinkle over cake mixture. Place 8 paper towels over slow cooker bowl and secure with lid. (This helps to trap steam.) Cook on LOW setting for 4 to 6 hours. Do not lift lid to check cake for the first 3 hours. Serve warm with whipped topping or vanilla ice cream (even better). 1 of the 7 Posted June 10, 2011 Share Posted June 10, 2011 Most people would probably see it as an appetizer, but I eat it as a meal with pita bread: Spinach, crab, and artichoke dip. 1 pkg. frozen chopped spinach, thawed and squeezed nearly dry 1 tub cream cheese (reduced fat can be used) 1 jar marinated artichoke hearts, drained and finely chopped 1 can crab meat, drained and shredded 1/4 teaspoon hot pepper sauce Combine spinach, cream cheese, artichoke hearts, crabmeat and pepper sauce in 1 1/2 quart slow cooker. HowItIs Posted June 10, 2011 Share Posted June 10, 2011 Beef Stew is a good crockpot meal. 2 lbs beef stew meat, cut into 1 inch pieces 1/4 cup flour 1/2 teaspoon pepper 1 teaspoon Worcestershire sauce 1 bay leaf 3 potatoes, diced 1 stalk celery, sliced 1 1/2 teaspoons salt 1 1/2 cups beef broth 1 garlic clove 1 teaspoon paprika 2 onions, chopped 1 Place meat in crock pot. 2 Mix flour, salt, pepper and pour over meat. 3 Stir to coat meat with flour. 4 Add remaining ingredients and stir to mix well. 5 Cover and cook on low for 10-12 hours or high for 4-6 hours. 6 Stir stew thoroughly before serving. AND 15 Bean Soup is an old Southern favorite: 1 lb 15 bean soup mix 1 tbs vegetable oil 1 large red onion, chopped 3 large cloves garlic, minced 2 bunches chopped green onions 1 tsp dried basil or 1 tbs fresh basil 1 tsp dried oregano or 1 tbs fresh oregano 1 tsp dried thyme or 1 tbs fresh thyme 1/2 tsp white pepper 1/2 tsp black pepper 1/2 tsp cayenne pepper 1/4 to 1/2 tsp red pepper flakes zest of 1 lemon or lime 1 tbs rice wine vinegar or balsamic vinegar 2 qts vegetable stock or 2 qts water with 2 tbs vegetable stock base Prepare beans according to package directions by soaking in water overnight or simmering them in water for an hour, draining the water and reserving the beans in a colander. Saute onions in oil for 5 to 8 minutes over medium heat til they are soft. Add minced garlic, scallions and all of the herbs and spices, including the zest, stir and heat through for about 2 minutes. Add vinegar and stir, then add beans, stock or water and base or plain water, cover pot and bring to a boil. Lower heat to simmer. Cover pot again and allow to simmer for 11/2 hours. . Check for level of liquid occasionally. Add additional stock or water if soup appears too thick for your taste. Check beans for tenderness. If not soft, cook at simmer for another 1/2 hour. Crock pot is only for the winter in our house I love making pulled pork... using a pork loin or shoulder (I like loin because less fat, shoulder is great for smoking though) Rub pork with your favorite rib rub the night before. In the morning, put a rough chopped onion in crock pot and add pork loin. Add 1 cup of apple cider and 1 cup of apple cider vinegar. Cook on low for 8 - 10 hours. I used a half of a loin - I would say three pounds and it was plenty for me. I would make the whole loin if I were making it for a party. Super simple too. Ingredients 1 1/4 pounds lean ground turkey 1 large onion, chopped 1 garlic clove, minced 1 1/2 cups frozen corn kernels 1 red bell pepper, chopped 1 green bell pepper, chopped 1 (28-oz.) can crushed tomatoes 1 (15-oz.) can black beans, rinsed and drained 1 (8-oz.) can tomato sauce 1 (1.25-oz.) package chili seasoning mix 1/2 teaspoon salt Prep Cook first 3 ingredients in a large skillet over medium-high heat, stirring until turkey crumbles and is no longer pink; drain. Spoon mixture into a 5 1/2-qt. slow cooker; stir in corn and next 7 ingredients until well blended. 2. Cook at HIGH 4 to 5 hours or at LOW 6 to 8 hours. Serve with desired toppings Toppings: shredded Colby and Monterey Jack cheese blend, finely chopped red onion. I looked at making my own chili seasoning but it was less expensive to buy the packet. This is probably my favorite. ATM anyway! POPPY'S POT MEATFrom, The Crockin' Girls Slow Cookin' Companion 5 lbs beef roast, cut into 1-inch pieces (way too tiny for me, I cut huge pieces)1/2 onion, coarsely chopped (I add one full onion)2 cups water1/2 cup mustard1 cup ketchup1 Tbl hot sauce1 oz liquid smoke1/2 cup brown sugar2/3 cup Worcestershire saucesalt, pepper Put a layer of meat in the bottom of the slow-cooker, followed by onion salt and pepper. Continue the layers until meat and onion are gone. Add 2 cups water and cook on high for 4 hours, stirring at about 2 hours. Dip out all but 1/2 inch of the juice from the slow cooker.
