I don't know how he does it cause my meatloaf

sucks and I haven't tried to make one in years.

Hope this reply isn't too late, but I have a really great Meat Loaf recipe that I used to make daily a restaurant I chef'd at... Just made it last week as a matter of fact.

(This has been altered from a Greek recipe to American style)

 

3/4 lb 85% ground beef

1/4 lb pork sausage (your choice, hot/mild/italian, whatever)

1 red bell pepper

1 yellow bell pepper

1 white onion

1 jalapeno pepper

3 cloves garlic

4 slices bread

ketchup

 

(Note: not sausage links. Ground sausage from the meat counter)

 

Pre-heat over to 350.

 

Take 4 pieces of any type bread and soak in milk, in a bowl.

 

Finely chop (mince) the red pepper, yellow pepper, onion, jalapeno and garlic. Toss all of it in a sauce pan with some olive oil (or veg oil), and sautee over med-high heat, add salt and black pepper. Sautee until the onions are translucent and starting to slightly brown.

 

While the veggies are cooking, Combine the beef and sausage in a bowl. Add 1 egg to the mixture and use your hands to smash it all together. Now, "ring-out" the milk soaked bread, just leaving a bit of milk (moisture) in the bread. Add this to the beef, sausage and egg mixture. Mix again with your hands, smashing it all together.

 

Just as the veggie mix is almost finished cooking, add about 1 cup of Ketchup to the sauce pan. Blend all together and remove from heat. Taste it. Salt and pepper to taste if not right (this mixture should be 1/2 thick, 1/2 runny).

 

Now take a baking sheet, lightly oil the bottom. Dump the bowl of beef/sausage/egg/bread mixture onto the baking sheet. Form it with your hands to make a "loaf".

 

Spoon 1/2 of your veggie mixture over the top of the loaf.

Put in the oven for 1 hour.

 

Once cooked, let it sit for 10 minutes.

While it sits, you reheat the remaining veggie mixture (just warm it).

 

Slice your Meat Loaf, plate it, and spoon some of the remaining veggie mix over each slice.

 

Serve with anything you want, but of course mashed potatoes and gravy are the classic side to this meal.

 

Notes: Adding the sausage to this dish is the "key". Most people never think to add sausage to meat loaf but it works so nicely and the fat from the sausage renders very well with the beef. You can use 90% ground beef but it might not be as juicy as using a 'less lean' beef.

Here's a twist on an old favorite.

 

Turkey Meat Loaf

 

Need:

Ground Turkey

Bacon Bits

Adobo Seasoning

Bread Crumbs

White Wine

 

Coat pan with cooking spray

Mix all of the above together

Shape firmly into a loaf

Sprinkle a few more bacon bits on top

Gingerly Sprinkle some more White Wine on top

Place in pan

Cover with foil

cook at approx 350-375 for 30-45 mins.
