  1. Is balsamic vinegar or olive oil considered raw? I'm guessing no but the other night I made a salad with yellow bell pepper, olives, roma tomato, english cucumber, and a little bit of salt, it was great. I think I'll make it again tonight but with avocado.

    Ugh how does Geddy stay so trim. This picture is like what? 20 years old (?) and he still has a nice waist like that. I want to know what his diet secrets are.

     

    I think this picture was taken around the time of Vapor Trails (I have the magazine somewhere...trying to hunt it down to confirm). So, it's not quite 20 years old, but that would make it about 12 years old. So, yeah....he's still slim and trim. I usually hate people who are naturally slim like that, but in this case I am quite happy about it. :drool:

     

    I know that Geddy is a runner, plus he and his wife were pretty big into cycling for a while. I'm sure he has a personal trainer and all that stuff so he stays healthy. Whatever it is, I am glad he does it! :yes:

    Here's how it turned out. I was given a rave about it and asked if we could have this again. :)

     

    Success :D

    I tweaked the recipe a bit last night (was asked to make it again :) )

    Instead of parsley I used cilantro (WHAT A REVELATION!!!)

    I also added some red onion and took out the garlic (we didnt have any LOL )

     

    WOW WOW WOW!!! Too effin GOOOD! :D

     

    Should have a new blender this week and then some REAL awesome creations will be made.

     

    Man, I bet the cilantro makes it out of this world!

     

    Last night I had spicy tuna (it was cooked because it's impossible to find sushi-grade raw fish around here unless you special order) wrapped in raw cabbage leaves. Simple and SOOOOOO good!

    Spicy tuna sushi is my all time FAVE!!!!

     

    The cilantro really did give it an extra level of RAWSOMENESS!!! :D

     

    Yeah, I love me some tuna sashimi. A little soy, some wasabi, maybe some sriracha sauce....yum! :drool:

  5. I used to hate beets as a kid, you know those pickled canned ones. UGH! But 5 years ago I was at a potluck BBQ and someone brought fresh raw beets straight from their garden and I ate them all up and i believe even went for seconds! Now I LOVE LOVE LOVE beets. Especially raw just a lil warmed up so the juices flow nice.

     

    I still have a hard time with beets. No matter how hard I scrub them they still taste like dirt to me :huh: But, I will use them in my fruit/veggie juices. I can handle the taste mixed with other stuff. :yes:

     

    Other than that, I can't eat peas out of a can (have to be frozen or fresh). Never been able to eat those nasty things. I still can't stand mayo, and fish eggs just weird me out.

     

    I'm a pretty open-minded eater after that. I've always been willing to try just about anything once. I was never very picky as a kid.

    I thought the horrible dated countertop in the background would show that I was in my cheap apartment. No, I makes it all myself!

    I thought maybe there was some old school place in town with great cheap food like most towns have. Looks like a pro made that..... Yummo :)

     

    Nope, just me. I fancy myself a foodie of sorts, but only when it suits me ;)

  12. I was all by my widdle lonesome, so I stopped at a bar and grill joint by myself for chicken strips and sauteed veggies. And a top shelf margarita on the rocks.

     

    Sometimes I just want simple, y'know?

     

    Sometimes simple is awesome! I met a friend from out of town at a Mexican restaurant last Friday, and all I wanted was a bloody mary and a bowl of their chicken tortilla soup. They make it like it should be; with a chicken broth base instead of a tomato base. It was awesome. It's the little things in life, ya know?

  14. Yeah, but those jeans are skin tight. How the heck did he jump around in them?

     

    I'm glad they are more themselves these days, but I do hope he saved those red sneakers. Too bad they weren't high tops! :LOL:

     

    They are actually leggings, not jeans. I've seen many pictures of Geddy during the RTB era where he's wearing leggings then a button-up shirt. Never saw the tank top before, though. :huh:

  15. I was sharing with Ya_Big_Tree that I made my own marinated artichoke hearts this week. I think they turned out FABULOUS, so I thought I would share my "recipe" with you all. I am a "toss it all together and tweak it until it tastes fantastic" kind of cook, so I really don't have measurements. But, this gives you a great base to build upon. Also, if you don't care for the taste of vinegar, I recommend leaving out the balsamic and just using the white vinegar. But, the vinegar is pretty necessary for the marinating process in this case.

     

    Canned artichoke hearts packed in water, most of the water drained (I was able to find organic)

    Extra virgin olive oil

    White vinegar

    Balsamic vinegar

    2-3 cloves of garlic, minced or smashed (I use a garlic press)

     

    Spices (all to taste):

    Bay leaves

    Sea salt

    fresh ground pepper

    Dill leaves

    Ground mustard seed

    Red pepper flake (optional)

     

    Place all ingredients into a glass container, making sure that the liquids cover all the artichoke hearts. Place the lid on tight and give it a good shake to mix everything together. Place in a cool, dark place (or even refrigerate) for at least 3 days, shaking the container once daily to stir together spices that might sink to the bottom. The longer they sit, the more infused with flavor they will become. Enjoy on salads, blend and use in dips or as a pesto, or eat on their own!

     

    Side note: I probably would have put some rosemary in the mix if I hadn't have run out of it a few days before. Definitely doing that next time.
