I do not smoke. Only things I have ever smoked in my entire life were 3 cigars.

 

1 Dominican at each of 2 weddings that I was in the bridal party for, and one Cuban while in Vancouver seeing we can't buy them in the US.

The first time I made smoked salmon, I let it sit in the brine a little long and it was too salty to my liking. I got it down since then. My brother is a fisherman, and usually catches a good 30 lbs of salmon a year. I smoke about half of it for him
