Appetizers include alligator fingers, armadillo eggs, oysters chipolte, deep fried pickle chips..... :drool: Main courses are very diverse and DEELICIOUS......catfish, seafood, soups, blackened dishes, salads, pastas...... I had the seafood and chicken au gratin with armadillo eggs. HUGE plates of food for a very good price. (here's my recipe): Emeril's Cajun Jambalaya(For a large pot)Ingredients2 lbs medium shrimp, peeled, deveined2 lbs chicken, dicedCreole seasoning, recipe follows4 tablespoons olive oil1.5 cup chopped onion1.5 cup chopped red pepper1cup chopped celery2 cloves chopped garlic1.5 cup chopped tomatoes3 bay leaves1 tablespoon Worcestershire sauce1 tablespoon hot sauce2 pounds of rice6 cups chicken stock (or more if necessary)1.5 pounds Andouille sausage, slicedSalt and pepperDirectionsIn a bowl combine shrimp, chicken and Emeril’s Creole seasoning, and work in seasoning well. In a large saucepan heat oil over high heat with onion, pepper and celery, 3 minutes. Add garlic, tomatoes, bay leaves, Worcestershire and hot sauces. Stir in rice and slowly add broth. Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes. When rice is just tender add shrimp and chicken mixture and sausage. Cook until meat is done, about 10 minutes more. Season to taste with salt, pepper and Creole seasoning.
