The shoegaze thread inspired this topic as it brought My Boody Valentine to mind, and hence their cover of Wire's Map Ref 41N 93W; probably my favorite cover ever as one of my favorite groups takes my favorite song from another one of my favorite groups and makes it completely awesome in a whole new way.

Some others I really like are Hendrix's All Along the Watchtower, Cocker's With a Little Help from My Friends, Johnny Cash's Hurt, and Wings' Richard Cory (from Wings Over America). Each of these covers took an already fantastic song and re-invented it in its own fantastic way but this is the nearest and dearest:

Monster Magnet has a couple of good ones. They do an excellent job of David Gilmour's No Way Out Of Here and the Stones' 2000 Light Years From Home.

Lacuna Coil:

Depeche Mode- Enjoy The Silence (feautured on their 2006 masterpiece Karmacode. Amazing cover! Even DM admitted it was great! )

REM- Losing My Religion (an interesting cover, the band gothed it up and made it a duet. Very good.)

Dubstar- Stars (I enjoy both versions, but Lacuna added a darkness that the original version sorely needed.)

Okay, they only ever covered these three songs. But I love them all!

Miles Davis covered Some Day My Prince Will Come. Stunning.

Two side of the same single:

Big Black covers Cheap Trick's He's a Whore and Kraftwerk's The Model.

He's a Whore is just another take on what was already a great recording, but The Model completely turns the original on its head. One of my favorites (my work blocks the studio version because of the name of the lp on which the track appeared, I suspect, so here's a live version):
