Yeah, Tick knows his way around the kitchen. He has made numerous food threads in Random Samples prior to food being added to this section.

 

I think my favorite is a Delmonico steak. Other faves are skirt and flank.

If you have a nice thick steak, it would be medium.... I usually cook mine less than that, I like mine between med-rare and med....

What's your marinade? I love heavy garlic, olive oil and a little lime juice to tenderize the meat. Yup - pat dry, and sprinkle on KOSHER salt and pepper and let sit on the counter 1/2 hour before starting the grill. When the coals are ready, the steak will be at a perfect temp for the grill.

 

When I make steak sandwiches, I like marinating it in creamy garlic dressing and sprinkling on Lawry's seasoned salt

I like mine between rare and med rare. It doesn't bother me if my steak moos when I stick the fork into it.

 

And nothing beats a rib-eye or porterhouse.

Have you ever made steak fajitas on the grill? That marinade with a little heat would make good fajitas.

 

I use the fajita rub found in Raichelens on both the meat and onions and peppers. i grill the veggies on a grate.

 

typically i cook beef with mesquite wood chunks although hickory, oak and apple do just fine too IMO.

Any tips for a New York strip that ISN'T tough? I've tried marinating, tenderizing. Hit or miss, but that's the one I have trouble with.

Any tips for a New York strip that ISN'T tough? I've tried marinating, tenderizing. Hit or miss, but that's the one I have trouble with.

I'm not a big fan of New York strip. All I can say is sear it on high heat and don't over cook it. Strip steak doesn't have enough fat content(marbling)

There ok but I always go ribeye unless the strip is on sale for an awesome price.

Another thing on cooking times. A gas grill will cook your steak a bit faster then a charcoal grill. I have both and love charcoal more when I have the time for it.

Montreal Steal spice, water and lime/lemon juice.

 

4-5 Tbsp Steak spice

1 cup water

few drops of limeor lemon juice.

 

Mix it all in a ziploc bag. Put the water in first, this keeps the spice from getting wtuck in the corners of the bag. Mix all ingredients well until most of the spice is disolved, 1-2 minutes. Add the steak, making sure there is enough liquid to compeltely cover the steak. Leave for 12-24 hours.

Use a great steak like a rib eye.

Make sure you preheat your grill good and hot!

Marinate your steak 12 to 24 hours.

Take steak out of fridge and let it sit till its at room temperature.

Dry off steak before grilling. You don't want it wet.

Slap that sucker on diagonally across that grill and close the lid.

in 3 or 4 minutes turn it to the other angle diagonally to get nice cross grill marks, and close lid.

3 or 4 minutes later open lid and flip that sucker. Leave the heat high for 3 minutes then lower. Do the same diagonal thing as you did on the other side.

If you do this as I have told you, you will make kick ass steaks.

A nice ribeye will be perfection in 12 to 14 minutes depending on your grill.

12 - 14 minutes on a hot grill? Is that for well done?

Hell no. Its between medium rare and medium when I cook them.

I love it slightest more then medium rare but not quite medium.

What marinade do you like best?

I'm a big fan of Yoshidas original gourmet sauce. Its certainly one of my favorites.

i love yoshida but not for marinading steak. a good quality steak shouldn't need much, maybe a little salt and cracked pepper.

i like it for marinading chicken cutlets or stir fry beef. it's ok if you like it for steak but i'll pass unless it's a cheap cut and needs it. tongue.gif

one can marinate kobe beef with anything or nothing and it will taste terrific. trink39.gif i wish it wasn't so damn expensive.

I just watched that guy (is his name Guy?) on Food Network. He doesn't seem so bad. Interesting spiky hair since there is a woman who follows him who has similar hair (and is annoying).

Yes - Anne Burrell - I cannot stand the way she talks to her viewers. She talks like we are all idiots. And on the Worst Cooks show, she talks to her team like they are idiots. She is a hell of a chef though, I just can't get past the presentation.
