If you're from Canada, (or, as I've heard them say in Arkansas, "Canadia")... you've probably at least heard of bannock. But, has anyone ever tried it? Great at the campfire, or with eggs in the morning. Try this - (enough for four people.) 1 cup of flour, 2 tsp baking power, pinch of salt and enough water to make a sticky dough. Mix it all up, then use your hands and flatten it out so it's about 3/4 of an inch thick. Should be about 8 or 9 inches in diameter if you use the amounts above. Then fry it in canola (or veg) oil at medium high heat. It'll rise up and be cooked fast... 2 minutes per side, maybe less. Turn once. For crise-sake, Don't use olive oil... Eat it right away with butter... or, jam. You can add raisins, blueberries, dried cranberries, nuts... whatever the hell you want. It's not exactly a low fat thing, but who gives a shit sometimes, eh?
