I used to really like Head Cheese too, but that's not the kind of cheese you are talking about. It doesn't taste the way it used to even though they still make it.

About the only cheese I'm not fond of is smoked stuff. Smoking seems to make cheese taste less cheese.

 

Favourites:

Anything blue, Gorgonzola, Stilton, blue Brie

Swiss. I especially like Swiss and salami sandwiches

Havarti

Meunster

Monterrey Jack (unavailable here)

Very sharp crumbly Cheddar. Here lots of "Cheddar" tends to be creamy which is nice but not what I like. I finally found a 36 month old Cheddar that's good

Parmesan

 

There's some cheese that's terribly stinky but tastes wonderful whose name escapes me. Not Limburger

 

I could live on grilled cheese sandwiches

It was really good on a roll or good rye bread with some tasty mustard. :)

My grandmother loved head cheese. We took her to Germany just before she passed away and the one thing she wanted was some Old World head cheese.

Spanish manchego, which is made from sheep's milk. :drool:
