Cooking Nourshing Meals For One

Lorraine, I find that baking chicken breasts is simple, and there are a lot of ways to change things up so it doesn't get monotonous ..

 

For example, you can slice pineapple and put it on the chicken breast while it is cooking ... I put the chicken breast in the oven ( 375 or 400 ) for about 15 minutes, and when I flip it over, I put a lot of pineapple right on top of the chicken and let it finish cooking ..

 

Take that when its done, and put it into a mix of tri colored salad - greens, radicchio, etc and there ya go ..

 

You can do the same thing with tomatoes instead of pineapple

Another one that is pretty simple but very filling is making a big Caesar salad with chicken ..

 

There are dozens of Caesar dressings available ( I have not tried making my own from scratch yet ) .. I like Cucina Antica and my Mom swears by Cardini's .. Just get one of those three packs of Romaine lettuce, some crutons, your dressing and the baked chicken ( probably better plain if you're having it w/ Caesar dressing ) and some optional romano or parmesan grated or shaved cheese ..

I might not want to go to a lot of trouble for just myself but I don't want to wind up just eating junk food to avoid cooking at all. That's why I'm asking.

That's understandable. When I'm alone I eat a lot of omelettes. Their relatively inexpensive, with lots of opportunity for variety of flavor....and their loaded with protein.

That's understandable. When I'm alone I eat a lot of omelettes. Their relatively inexpensive, with lots of opportunity for variety of flavor....and their loaded with protein.

That's a good idea. I didn't even think of that.

Not all at once, but I'll select from leftover ham or steak, cheddar, monterrey or swiss, cheese, mushrooms, tomatoes, avocado, broccoli. I may spice it up with salsa or siracha, eating it solo or cut up with a tortilla.

Some people put hot sauce on practically everything but I'd never thought of salsa. I don't know many people who even like salsa.

I never thought of putting salsa on an omelette either. It does sound good.

 

Have to go buy omelette ingredients tomorrow or Tuesday. I went to the store on the way home from the hospital today, but once I got in the store I couldn't even remember what I needed to buy.

I tried it this morning and I didn't care for it. I much prefer salsa with chips. You should write down a grocery list since you are so stressed right now which makes it hard to remember things.
