Salad Depression...and other vegetable afflictions

Salad depression is the worst! Anyone suffer this affliction?

I just had a salad. The key is to enjoying it is to make sure you have plenty of cool stuff with it.

Like say a bacon cheeseburger?

One of my favorite things to eat is the poached pear salad I make. It's an effort to make it, but it is worth it.

 

I peel, quarter and seed a pear for each person I'll be serving (usually 4). Throw those in a pot with red wine, grape juice and a little sugar and a dash of nutmeg. Simmer for at least an hour, when the sauce gets real think like a syrup - time to stop. (save the liquid for the dressing)

 

While it's cooking, I will candy some walnuts (just heat sugar until lightly golden, stir in walnuts... done. Also will grill chicken.

 

To serve: Romaine, sliced chicken, poached pears, candied walnuts, gorgonzola cheese. Top with dressing made from olive oil, salt, pepper and reserved poaching liquid.

Anything you like. I mean I used to have kebabs with pitta bread, relish, chili sauce and some salad was thrown in there as well. That's the way to do it just have some salad thrown in so you hardly even notice it.

I can never just sit and eat a salad by itself,

 

When I go out to dinner. I make sure it comes with the main course.
