No Bake Cookies:

 

1 stick butter

1/4 c. cocoa

1/2 c. milk

2 c. sugar

1 tbsp. vanilla

1/2 c. peanut butter

3 c. oats

 

Boil butter, cocoa, milk, sugar, vanilla and peanut butter for 1 minute. Add oats and mix well. Spoon dollops out onto wax paper.

 

 

These are SO easy to make and SO GOOD. I used to eat them as a kid and have just started making them again.

In my continuing quest to eat more healthfully (and still have food that my 10 year old won't turn his nose up at) I made this Food Network recipe last night, and it was absolutely delicious...very different in texture because of the barley (which I happen to love) and the veggies were nice and tender but still bright. I didn't add the butter at the end.

 

Vegetable Barley Risotto

Recipe courtesy "Robert, the First," by Robert Irvine with Brian O'Reilly, Harper Collins Publishers, 2006

 

6 cups chicken broth

1/8 cup canola oil

1 pound bag pearl barley

1 zucchini, medium dice

1 yellow squash, medium dice

1 carrot, medium dice

1 red onion, medium dice

1 bay leaf

1 clove garlic, chopped

1/4 cup whole unsalted butter

 

Bring chicken broth to a simmer. In a separate large saucepan on an adjacent burner, heat the oil and add barley. Lightly saute: you actually are toasting the barley. Add vegetables to the barley and saute them until translucent. Add bay leaf and garlic. Begin slowly adding broth, 1 ladle-full at a time, to the barley/vegetable pan, stirring occasionally: this will bring out the starch in the barley. As the mixture absorbs the broth, ladle more into the pot. When all of the broth has been ladled into the barley pot, slowly simmer until barley is soft and creamy. Add butter as the last step for more flavor and creaminess to risotto.

ask and you shall recieve...

 

the fresh salsa:

1can black beans, drained, rinsed

1 can corn, also drained & rinsed ( i have use about 15 oz of frozen &/or fresh corn too)

1 red, or yellow pepper, chopped

green onion/scallions, chopped

1 red onion, chopped

1 or 2 cloves of garlic (chopped....)

1 med tomato...also chopped... (i'm beginning to sound redundant...)

fresh cilantro chopped (about 1 Tablespoon, but add more or less...your desire)

couple splashes of hot sauce (again, to your own liking)

1 Tablespoon Lime juice (can use lemon if no lime is around)

and...about a 1/3-1/2 C of Italian dressing

 

mix all that up together... let it chill out for a while in the frig....

drain some of the juices and serve with those Tostitos scoop chips...or any kind of tortilla chips ya got...

 

 

i love this stuff and make it year round...

doesn't get any better... it's heart healthy.... flavor full..and it's a hit at every gathering we go to!!!

Cheesy Bacon Dip

Really good on pita chips!

 

 

1 lb. bacon - crumbled

1 pkg. cream cheese - softened

12 oz. sour cream (just don't use the whole 16

oz. container)

1 1/2 tsp. worcestershire (had to go and check

the bottle to spell

that!)

2 cups shredded cheddar cheese (I think extra

sharp tastes best but you

have

to shred it yourself)

 

I made mine in my mini crock pot - if you have

one then just melt the

cheese in there first (can take almost an hour)

then add the rest of the

ingredients, mix well and let it go for about 2

hours until it gets nice

and hot.

 

If you're not using a crock pot then you can just

mix all ingredients

together and bake at 350 for one hour.

Warm Tortellini and Cherry Tomato Salad from Cooking Light Magazine

Extravirgin olive oil and two kinds of vinegar make an easy, classic dressing for this pasta-and-vegetable salad. You can also try this with chicken or mushroom tortellini or cheese ravioli.

 

2 (9-ounce) packages fresh cheese tortellini

1 1/2 cups (1 1/2-inch-long) slices fresh asparagus (about 1 pound)

3 tablespoons red wine vinegar

1 tablespoon balsamic vinegar

1 tablespoon extravirgin olive oil

1/4 teaspoon black pepper

4 cups trimmed arugula

1 1/2 cups halved cherry tomatoes

3/4 cup (3 ounces) pregrated fresh Parmesan cheese

1/2 cup thinly sliced red onion

1/3 cup thinly sliced fresh basil

1 (14-ounce) can artichoke hearts, drained and quartered

 

Cook pasta according to package directions, omitting salt and fat. Add asparagus to pasta during last 2 minutes of cook time. Drain.

While pasta cooks, combine vinegars, oil, and pepper in a large bowl, stirring with a whisk. Add pasta mixture, arugula, and remaining ingredients; toss to coat.

 

Yield: 6 servings (serving size: 1 1/2 cups)

Chili Recipe

 

5lb ground beef, the leaner the better cause this will not be drained.

4-16oz cans kidney beans

4-16oz cans DICED tomato

2 medium onions, chopped

3 green peppers, chopped

2 cloves garlic, chopped

chili powder ( I don't have an amount... I add it to

the ground beef as I am browning it so it adds more

flavor to the meat. Add as much as you want... I promise,

there can never be too much. wink.gif )

 

Brown ground beef while adding chili powder

to it. DO NOT DRAIN!!!

 

Put ground beef, kidney beans, and diced tomato

in large pot and put on low.

 

Sautee onion, pepper, and garlic then add to the large pot.

Add salt and pepper to taste.

 

Let this all simmer together for at least 2 1/2 hours before

serving for the BEST flavor, or you can put in a crock pot on

low and leave it for the party.

 

This will serve a PAGSCON!!! new_thumbsupsmileyanim.gif

 

Sorry if I took TOO LONG getting this up. I am terrible at

Sure. Lots BUT what kind of cupcakes? Chocolate, vanilla, etc. Do you want homemade icing recipes too? Any particular flavor? Nothing beats homemade cakes/cupcakes.

Vanilla and Chocolate would be great. And YES I need a good icing recipe. I'm a huge fan of whipped icing on cakes, can that be done on cupcakes?
