I like Insanity sauce for a drop or two in a bowl of chili... not for pouring on food. This one is hot, but I can still pour it on tacos without getting my ass kicked.

And that's what I should have mentioned in my first post. I want a hot sauce I can drizzle over something. Not just to add to a dish to make the entire thing hot. Besides, I'm the only one in the house who likes things really spicy so I always need something I can add to my own food.

Yeah, this is the one. It's nice and hot, but will not make food unbearable if you pour it on. The local Mexican joint has this, and I use almost half the bottle - pour a little in the salsa, some on my rice, some in my food... :)

See, that's where I'm out on the whole hot sauce/pepper thing.  When it renders the dish so goddam hot that it makes you feel like you just swallowed a supernova, and you can't taste anything of the actual dish, there's no point.

A year ago I was in Scottsdale on business, the schmancy mall there had a shop (probably 10' X 30') that only sold hot sauces.  Literally hundreds of varieties of hot sauces.   I live in Texas and had no idea it was that much of a business.  Bunch of freaking masochists if you ask me.  Then again, I no longer have a large intestine... spicy things do not play well for me these days.

Alas, who ever suggested a ghost pepper sauce... don't ever do that!
