It was probably marketed "Stereo - the way it was meant to be heard". Then the record companies sold as much they could until a point where they had to come up with something new. I know that mixing in mono is more difficult because all the instruments fight for the same space. If done right you probably wouldn't notice, but todays music will sound even worse in mono I think.
