They got so many huge hits that most of their other stuff just goes unnoticed. There's not one album, including their big 1968-72 quartet, that you can listen to all the way through without wearing out the skip button on your CD player! That is true. All their albums do have a some tracks you always skip. But I think they make up for by making the good tracks the best they can be. I may skip half of Beggar's Banquet when I listen to it but Sympathy For The Devil, No Expectations, Jig-Saw Puzzle, Street Fighting Man and Salt Of The Earth are all so good that it doesn't matter to me that I find the rest of the album so-so.
