Well, summer's almost over and thought I'd take a minute to remind you to grab onto that BBQ while you can. I'm talking BBQ - not just stuff thrown on the grill. Stuff that has been slow cooked in a smoker for hours:
Ribs
Pulled Pork
Beef Brisket
BBQ Chicken

A new place opened near work and we hit it today... amazing brisket. Just amazing. So tender, perfect amount of smoke and char on the outside.

This past weekend, I threw a pork shoulder on the smoker for 12 hours. I have an electric water smoker, and I put apple juice, apple cider vinegar and water in the water basin. Went to coach football and the sugars in the apple juice burned to high heaven when the basin went dry. Totally  ruined the pork shoulder... lucky it was only $10 for the shoulder.

Never one to claim defeat, I threw 3 racks of ribs on the smoker the next day and watched the liquid level very carefully, mopping the ribs every 2 hours and topping off the basin. Man did the ribs turn out good.

One of the ONLY redeeming things about living in the Deep South is the BBQ.

I have to have cornbread with BBQ. I do not like baked beans at all. When I make it at home... always have cornbread and grilled corn.

I have to have cornbread with BBQ. I do not like baked beans at all. When I make it at home... always have cornbread and grilled corn.

I'm not a huge fan of baked beans, normally.  But I have a co-worker who makes wicked good ones.  (The generous addition of bacon is key).  

I'd rather just have a nice hot roll or a biscuit.  Or just 86 the bread entirely, even (leaves room for extra helpings of meat).  But I really freaking hate cornbread, always have.  And the mere thought of sweet potato pie (or sweet potato anything, really) turns my stomach.

making cast iron cornbread tonight to go along with my ghost pepper chile.

the first two dishes i cooked this year with the ghosts i was not particularly blown away by the heat. time to up the ante......

Hell yeah!!

We had chili last night and I always make it medium spicy. I have some Dave's Insanity Ghost Pepper Sauce that I add to it. Usually about a half tsp - a full tsp does a bowl good biggrin.gif
