Has anyone here ever made their own cheese? I understand mozzarella is pretty easy - you don't need a lot of equipment, just patience, and it doesn't have to be aged.

ah...cheese.

 

Omar Kyahham should have professed, "A loaf of bread, a jug of wine, and cheese" How I could laud my fondness for cheese...but I digress..

 

Faves?

Asiago -just wonderfully sharp and tangy...so good!

Manchego--fantastic with fruit and salads

Swiss-Quiche anyone? Reuben? And YES, to snack, on a wheat thin or with pretzels...good god!

Bleu-nothing better on a wing! tasty in a salad.

 

The standbys

Cheddar, for pretty much anything, and it should be sharp.

 

Mozzarella-for anything Italian...it just IS.

 

Cream-cause what's a NY bagel without it?

 

American-Cause what's bologna without it? or grilled cheese?

 

Provolone-salami doesnt exist without it. Antipasto not the same without it.

 

Locatelli/Romano-Pasta anyone?

 

I say again...A loaf of bread, a jug of wine, and cheese!

 

Or maybe Omar was right, "A loaf of bread, a jug of wine and thou" for the cheese goes without saying!

I love all cheese, especially feta, but cheese (in fact, all food it appears) just doesn't seem to like me. I don't know what's going on with my body. I think I need to see a doctor. :S

 

But yes, cheese is a guilty pleasure. Mm, feta, gouda, swiss, all cheeses. Cheese and crackers and wine, cheese on a sandwich, string cheese, cheese by itself... delicious.

Cheese! Cheese rocks! I love them all, but favor the "mild" ones: meunster, swiss, mozarella, provolone...

 

All time favorite is Muenster. My dad introduced this to my sister and I when we were in our early teens, and the two of us are still big champions for it to this day. I was ordering some at a deli once when a guy near me asked, "What was that cheese you just ordered? What's it taste like?" I was happy to promote it, turn someone else on to it.

super sharp cheddar...the sharper the better (up to a point, I'm sure, though that point has not yet been reached)
