Lorraine
I used to really like Head Cheese too, but that's not the kind of cheese you are talking about. It doesn't taste the way it used to even though they still make it. https://en.wikipedia.org/wiki/Head_cheese

pjbear05
Cheddar, jack and mozzarella. I have an allergy to molds so blue cheese and Gorgonzola are out.
IwillchooseFreeWill
About the only cheese I'm not fond of is smoked stuff. Smoking seems to make cheese taste less cheese. Favourites:Anything blue, Gorgonzola, Stilton, blue Brie Swiss. I especially like Swiss and salami sandwiches Havarti MeunsterMonterrey Jack (unavailable here)Very sharp crumbly Cheddar. Here lots of "Cheddar" tends to be creamy which is nice but not what I like. I finally found a 36 month old Cheddar that's goodParmesan There's some cheese that's terribly stinky but tastes wonderful whose name escapes me. Not Limburger I could live on grilled cheese sandwiches

We took her to Germany just before she passed away and the one thing she wanted was some Old World head cheese.
