gates even has the same sort of galloping sound priest and maiden are known for

It's only maiden who have a "galloping sound".

Priest has a pulsating sound. Ian Hill is a master of holding down the fort.

not at all talking about bass. I hear a charging gallop all over the stained class record. in my music theory book the chapter on "galloping" is right next to "pulsating"

Without looking at the rest of this thread my vote goes to:

Big Generator(yes the title track)

There's also some metal sounding stuff on Fly From Here (the opening track in particular)

Some stuff on talk

City of Love (Big Generator)

and of course Machine Messiah

Not sure I can pick just one of those but I guess maybe the title track to BG.

Metal wasn't much of a thing in the seventies imo so not much of the older stuff had a sound that was metallish(imo). Maybe the guitar in perpetual change, southside of the sky and some of ritual(not much else though imo).

South Side Of The Sky. If Machine Messiah is more metal, it isn’t necessarily better metal. (Though both are great)

Priest, and others (Styx) used it, but didn't rely on it.

Which Priest songs is it used in?

Desert Plains has a variant.
