Medium to medium-well.  Hot & juicy, but not bloody.

I prefer it medium well when I order it at a restaurant. I like to cook it rare when I do it because i actually check the temperature

Medium well out here, medium stateside. They're equivalent.

Order a medium rare here and you'll get the equivalent of rare stateside.

I liked your description of "not mooing anymore" !!   That was my only request for steaks for years, growing up!  My dad was a purple in the middle, still cold guy.  Can't take them quite that rare!  :D :D.  Medium rare is wonderful, though.

I put just a pinch of onion & garlic powder on mine.  Just enough to compliment the meat.  I want to taste the meat.

Not sure where the idea got started but the red juice in uncooked or rare meat is not blood.  For me I like it clightly link but cooked so medium well.  If you know what you're doing and buy the right meat it definitely isn't the consistency of beef jerky.

Guilty pleasure admission: I use ketchup on all beef, including steaks. My wife does as well. On our first date we both ordered steaks and when we realize we both used ketchup, it was like a sign from the heavens.

But before you start throwing pitchforks, I dabble with A1 now and then.

I think if you drew blood from my wife or I, 10% would be heinz ketchup.

Was at a nice steak joint with my buddy one time I'll never forget.  Waitress asked him how he wanted it cooked and he said:  "Delicious, please".

I used to like it rare, but no more.  Now I like it well done with the fat on and all crunchy!  :)
